Chicken Pie


You will need:

1 large onion
2 tablespoons sunflower oil
One piece of garlic, peeled and chopped, or one tspn crushed garlic
Some skinned, de-boned chicken breast pieces (about 8 pieces)
Any vegetables and/or rice
4 heaped tablespoons of brown onion soup powder
One tin chopped peeled tomatoes
1½ cups of water
Sprinkle of herbs (like thyme or marjoram)
Sprinkle of salt and pepper
1 packet frozen puff pastry


In a large saucepan or frying pan fry chopped onion in 1 tpsp oil for about 3 mins.
Add the chicken pieces and some more oil and stir-fry for 5 mins.
Add some vegetables, chopped garlic and herbs and mix together with wooden spoon, then sprinkle over the brown onion soup powder and mix some more.
Add the tin of tomatoes and enough water to cover the chicken.
Season with salt and pepper (or anything else like chilli sauce or a tin of chakalaka).
Put mixture into an ovenproof dish or tin, cover with the puff pastry and remember to pierce a few holes in the pastry to allow steam to escape.
Bake for about 20 minutes in a hot oven (about 200 °C).

    I made an interesting addition though - when you normally add water to the pan to cover the chicken - I added half a can of Kilkenny beer.
