Haddock kedgeree

you will need:

3 haddock fillets
3 tablespoons of butter or oil
1 chopped onion
½ cup chopped cucumber
1 cup frozen peas
1 or 2 hard boiled eggs, shelled and sliced
Salt and pepper
1 tablespoon lemon juice

Poach haddock fillets. (Place in a saucepan, cover with water, bring to the boil, turn down heat and simmer for 5 minutes. Add a bay leaf to the water for flavour.)
Flake coarsely.
In a frying pan, stir-fry onions and cucumbers in the butter (or oil) for about 2 minutes. Add the rice, fish, peas and eggs. Toss gently over low heat under heated through. Season with salt, pepper and lemon juice.
