Kassler chops and garlicky mashed potoato

To serve four portions of Kassler chops with garlic mashed potatoes you will need:
• 4-8 Kassler chops
• 1 tablespoon butter for frying
For the mashed potatoes:
• 8 cloves of garlic, peeled and coarsely chopped
• 4 large potatoes, peeled and quartered
• 1 tablespoon butter
• 1 tablespoon olive oil
• 1/2 cup coarsely chopped fresh chives
• 200 ml milk
• Salt and black pepper


To prepare the chops, melt the butter in a large pan over medium heat and then fry the Kassler chops for about 2 minutes on each side.
Remove pan from heat and cover.
Boil the potatoes in water until soft, then drain.
In a small saucepan melt the butter, add the olive oil and fry the garlic for about two minutes over medium heat.
Add the butter and garlic to the potatoes.
Place the potato pot back on the heat and add the milk.
Bring to the boil and let it simmer for 2 minutes.
Blend or mash until smooth.
Add salt and pepper and chives.
Ideally, the mashed potatoes should be a little more runny and creamy than normal mashed potatoes, so don’t be shy to add a little more milk, if necessary. Serve immediately with the Kassler chops.
