You will need:
A packet of skinned chicken breasts
1-2 cups of cooked rice
2 tablespoons of oil (olive or sunflower)
Various veges like onion, carrot, cabbage, green pepper, baby marrows, celery, broccoli, cauliflower – all chopped and sliced in to little pieces
1 or 2 teaspoons of garlic
Sprinkle of powdered ginger
Salt and pepper
2 or 3 tablespoons of Soy Sauce
Slice chicken breasts into thin slices.
Heat the oil in a frying pan. Add the chicken and stir fry, stirring all the time so doesn’t burn, until all cooked and chicken no longer pink. (About 5 mins). Remove from frying pan.
Add more oil and add the chopped up veges of your choice (onion always good for taste) and fry for 5 or so mins.
Add the chicken again and then add the garlic, salt and pepper and a bit of ginger.
Stir in the rice till all heated through.
Add the soy sauce, mix in well and serve.
